Soul Food

As the weather cools off, one of my favorite meals to make is a large pot of chili. I decided to err on the side of "healthy" and opted to swap out ground beef for turkey, but veggie lovers can use seitan or tofu as well. Onions, kidney beans, diced celery, and stewed tomatoes make the traditional base while the avocado slices, cilantro, and cheddar cheese add a Mexican-inspired flavor. Yum!
